About Sharpen Vegas

I’ve spent over 30 years as a professional chef, working in and owning restaurants where sharp knives weren’t a luxury—they were a necessity. Throughout my entire culinary career, I sharpened my own knives and the knives of the cooks I worked with, day in and day out, because in a real kitchen dull blades slow you down and create dangerous situations. In 2017, I retired from the restaurant business, but I didn’t walk away from knives. I continued sharpening part-time for friends, former colleagues, and local kitchens until 2021, when I made the decision to turn what I’d been doing for decades into a full-time mobile sharpening service. I approach sharpening like a chef, not a hobbyist. Every knife is treated as a working tool, sharpened for performance, edge retention, and safety—not just how shiny it looks. Whether it’s a high-end chef’s knife, a workhorse line knife, or your everyday home blades, I sharpen with the same standards I demanded in professional kitchens. If you rely on your knives, I’ll make sure they’re ready to work. In 2023 I started engraving knives as well.
